Ok.... I’m officially interested in this show, but I have no clue where to start watching... do I start watching this season, or the previous season?

I mean it doesn't really matter which you start on they don't really connect to each other (other than Zi-O and decade literally being about previous riders)
Some recommendations: Kuuga, Den-O, Gaim, Build.
Kuuga was released in 2000, which was like before the standard stuff for kids. Over the top violence and a pretty good story. If you can ignore the cheesy effects, then you might like this one.
Den-O has motif of time travel. Lovable characters and it's a bit rough in the beginning but you'll eventually see the overarching plot later on.
Gaim has fruit riders. Weird concept, but good execution. The story is surprisingly good later on.
Build is quite interesting as well. There's a huge overarching plot and some unexpected turns. It gets really good the more you watch.

Makes sense since toei temporarily stopped production of shows. Not to mention, Zero One has unknown air dates for new episodes at the moment.

For me, I understand how people are disappointed with the form that will appear for the rest of the show, since many of us expect something flashy or exquisite in final forms. I guess toei wanted to do something similar to the early ultimate forms of Kuuga and Agito, so Zero-Two was made sleek and simplistic like Zero-One.
So overall, I like the design.

I'm a new fan, only got through about 10 episodes of Zero-One, liked it but stuff happened and I forgot. I hear Saber is out now and plan to watch it, I've gotten familiar with Wonder Ride Books too. But anyways, yeah. I hope this actually works.

After the grittiness and suffering that was shown in Zero-One, the first 10 episodes of Saber were too childish and (personally) a step down to the usual manly KR of the Heisei and current (Reiwa?) era. The amount of CGI exceeding the amount of actual person to person contact is probably due to COVID, but meh, Saber was like Ghost or even Hibiki after succeeding an awesome/likable series. Tbh, I didn't know how Zero-One could've matched Zi-O, but they did. I may have to re-watch Saber from the start with no expectations to be able to take in every aspect it had to offer.

Kinda bummed that they went a bit far old school and brought back instead the concept of books = fairy tales = magical wonderland. Then again, they got Switches, Rings, Shift Cars, Medals, Lock Seeds, and other mundane concepts that made the respective Rider series awesome. I think it just boils down to the story and character progression since some series like Hibiki and Ghost never really made me want to rewatch it as much as say, Kabuto, Blade, Decade (which was my 2nd after Ryuki), and the succeeding Heisei to Reiwa Riders (except Saber, which I have explained earlier).
For me, Saber was too CGI-forward and I really wanted that balance they did for Zero-One (which had the last few episodes affected greatly by the pandemic yet finished strongly and bittersweet)

Ok so I've seen Saber episodes 1-6 here's my review
Overall plot:
Pacing is fast for the first 2 episodes, it continues to be decently fast but after that alot more bearable. The main group of like sub villains just kinda make fodder to beat up I guess but the reveal of Zooous is a lot more interesting. Obviously Calibur is the best of the group though, he feels the most like a strong villain you should fear. It's not anything super amazing but I'd say above average at the moment.
Touma: A little generic but I really like his character and I'm excited to see how they explore his past.
Kento: The best character for me so far, his dealing with the trauma of his dad betraying SoL is pretty well done imo.
Ren: He's meant to be annoying and is pretty annoying, but I wonder if there's a reason behind his behavior, it feels kind of unnatural. So far he definetly has the best fights and I like his weapon the best.
Ryo: At first I didn't like him but I've grown to like him. He doesn't feel like a father figure and more of just a member which I like, age doesn't make you better or worse.
Rintaro: I personally don't like him more than Kento but he's very good as of Episode 6. His entire life and pride seems to be built around the Sword of Logos, he's so surprised seeing things like eclairs cause he probably is to absorbed in his Rider duties. This makes his Master have a lot more impact than just a Teacher as he taught him how to live the Rider life which essentially is most of his life, so his rage against Zoous and despair after losing makes a lot of sense.
Tetsuo: Haven't seen to much of him but he's a pretty cool and likeable guy.
Tassel: The inclusion is kind of random I know but I got to say this guy is super intriguing. He just gets more unnerving every episode. At first I thought it was just typical obnoxiousness but I did spoil myself and apparently he gets downright creepy so it's definitely planned. Also, it's super creepy how he can just keep tabs of everyone at all times, like he's an Overseer. Maybe all the characters are just his puppets and he actually controls to narrative to make what he deems interesting?
Also side note: I really like how Touma's knowledge of books helps him combat his enemies.

One of my favorite Kamen Rider Is OOO because their is more Modes and it kinda reminds me of W in a way. But the modes I like is Tajador , Putotyra and Saigozo. I like Tajador because of the Bird like look also my favorite color is red. But his weapon it cool it’s like a Charging Up attack like weapons. Next mode is Putotyra. I like this mode because the Dinosaur like and his Evil like feeling. But his weapon is like a Axe/Cannon that uses Medal Cores to power up his attacks. And Saigozo I really like how all the animals he uses are Strong like the Rhino which he uses like as a attack when he does his final attack. And the Gorilla Gauntlet they look really nice with the Black and Silver it kinda looks more White tho than Silver. That’s all my favorite riders
