i think that would've been an awesome fight considering i dont think Anakin ever fought Maul.

Maybe but from the way Dave spoke it seems like he was easily going to kill Maul which makes sense since canon Vader is really in another league.

Maybe but personally I like Vader better.
I was wondering where I should start off from star wars, I've only seen movies.

I don't even remember them, I got bored of them. But I liked the mandalorian show, I still need to finish that. I was wondering if there was any other like that.

After the movies move on to the tv shows (the clone wars, rebels, resistance, mandalorian etc)

After the tv show move on to the comics (Vader etc)

After the comics move on to the books and novels: (lords of the sith, tarkin)

After the novels/comics you can optionally explore the video games but I doubt you would want to do that.

This is all coming from a long time star wars fan so I can tell you right off the bat I’m sure I know exactly what I’m talking about.

there is shows like Rebels, The Clone Wars and Resistance.

No worries. I can tell you right now that while it may seem like a lot, most of the quality is generally good (better than a lot of the movies anyway) and it’s worth your time to invest in since it’s quite entertaining. From my experience, the more you know about Star Wars the more you like it. At one point the mindset kinda moves on from space/sci fi to its own entire thing.

yeah some games have their own story campaigns. prime examples of this is Star Wars: Battlefront 2 and Star Wars: Squadrons.

No they do, the campaigns are basically the story modes.

it does. like Zeutron said, it just the story mode for that game. i think i shoulda mentioned that before.

Darth Sion was highly immortal and he held himself together using the dark side of the force alongside his inner rage- as a result, he experienced endless pain and suffering. There weren’t many situations where he could die, he (seemingly couldn’t be killed in any physical way and if he was ever struck down, he would simply pull himself back together. As a matter of fact, he only died after he had redeemed himself ultimately giving up his hold on the dark side allowing him to pass on

Luke Skywalker was a master of force sever in its many different forms. It was an extremely powerful light side technique that allowed its users to permanently and or temporarily sever ones connection to the force. 

If Darth Sion and Luke Skywalker fought, Luke would overwhelm Sion with a barrage of all powerful offensive abilities only for Sion to continuously revive himself. Eventually Luke would simply have to sever Sions connection to the force after wearing him down. You see, if Sion has his connection severed for even a couple of seconds he will instantly die since he uses the dark side of the force to give
him his immortality and keep himself alive, Sions actual physical form would instantly die if it didn’t have the dark side. As a result Luke would easily stomp Sion and the fact that Sion’s physical powers and abilities are sub par only makes it that much easier for Luke.
Random fun fact: (canon) Luke knew force pyrokinesis and even taught it to Leia.

Creating and manipulating fire through the force. It’s a downright insane ability. Forget insane, that’s straight up a legends tier ability.

Palpatine couldn’t create proper pyrokinesis. He could only use Sith alchemy force fire which is powerful but not on the same level as Luke’s true pyrokinesis. 

The greatest Sith in both canon and legends is Darth Sidious.

Yeh that's true I was thinking maybe Darth Vader could become more op than sidious
A pretty cool fact is that George Lucas originally intended for Leia to be the chosen one of his sequels trilogy. Thoughts?

I really love that idea. And luke does train Leia in canon so it makes sense and it would just be awesome.
