I decided not to include earth and space since I really don't find it as relevant (for clarification, I am particularly interested in hearing about the gr 11/12 north american courses, but I would still like an answer from anyone who has that kind of experience in any type of schooling and whether you have experienced them as units or entirely separate courses does not matter to me).
Personally, I would order them like this:
1: Biology
2: Chemistry
3: Physics
Okay, so I'm not studying in a North American course (an Indian), but anyways...
I'm currently in Class 12 (equivalent to grade 12 by North American standards) and I fully agree with your opinion. In my curriculum, Physics mostly consists of application type problems, and I'm not that good at those (and Math, that's a problem too). Chemistry has less of those and more theory while Biology consists of only theory and facts. So, yeah, Biology is the easiest for me, then Chemistry, then Physics, though the difference is not THAT high.
