Well, you could always start One Piece, that'll keep you busy for a while. 😁
But, besides that, here are a couple of my favorites that aren't too popular nowadays, so you might not have watched them yet.
Monster is one. Focuses on a pretty dark, but definitely compelling story with memorable characters and a unique plot (manga-wise, at least). Gotta be ready for graphic content, though. Gurren Lagann is another one I like. Starts off not very promising, and even bad in the beginning but improves a great deal in the latter half, so if you're alright with sticking around through a bit of the bad, you'll get something nice. Not really graphic, since it really is just mecha fighting, which isn't too bad. Also recently got into Golden Kamui, which did get a new season just last year, but still isn't too talked about. Honestly, the series did get worse over time, the fanservice was absurd and it became hard to take things seriously, but it did start off well, and so long as you're just looking for a little occasional fun, then eh, maybe it'll be for you.
Hope at least one of these piqued your interest, but I'm not exactly sure what you've seen yet or what you like, so I did what came to mind.

Sorry for being sort of vague about plot, I haven't watched/read any of them in some time, so it's hard to directly recall. I'll have to send them to you in an IM though, since spoilers aren't working on my end and I don't want to clog the thread with such a big post.
