I believe the cabbage market was at an all-time low, so the cabbage man decided to switch to selling lettuce seeing as most of his cabbage inventory had been destroyed throughout the Avatar series. On his expedition to the Southern Water tribes to obtain the highest grade of iceberg lettuce, his boat was swallowed beneath the antarctic waves in a storm and froze soon after, but not so late as to give cabbage man enough time to drown. Seventy-Eighty years later, he is still frozen in that iceberg, just like Aang was for a hundred. Maybe in about another twenty-thirty years, some kids will stumble upon his partially-emerged-in-the-ice boat while penguin sledding, *DISCLAIMER* but this is all meaningless speculation obviously and should not be taken seriously because it is about the cabbage man that turned lettuce man.
