Id try Arcade first to get used to the controls, Campaign is actually pretty good imo.

Galactic Assault, Heroes Vs Villains and Capital Supremacy are mainly the popular ones

No. With the addition of 7-9, its considered the skywalker saga

Ok. (Would you consider making this a star wars mega thread because I have only played a little bit of LEGO Star Wars and Battlefront, but I have watched all of the films and quite a bit of Star Wars theory)
