Defence - Earth Leone GB145 WB (good get a metal face, bull and RS tip to be top tier)
Stamina - Earth Virgo DF145 WD (good get bull, ad145/85/230 for top tier)

You could also do Rock Pegasus CH120RF. It's alright just get Metal Faces and Lightning L Drago for it to be top tier

I have Dark Wolf DF145FS and Storm Pegasus 105RF. Right now i have combined them to make Storm Pegasus Df 145FS but i would like to know if there is any better combos I can make, mostly based around defense and stamina.

Storm Pegasus DF145FS is horrible, just use Storm Pegasus 105RF, is outclassed but is your best bet. You cannot make any better combos nor can you make any stamina/defense ones. Dark Wolf is one of the worst beys.

Lightning L Drago 100RF is good, not top tier. A Metal Face will make top tier.

The Defense combo needs a Metal Face as well to be top tier.

Actually, Lightning L-Drago 100RF works exactly like MF Lightning L-Drago 100RF. I don't know why, but it works the same O.o
